Worm hotels for the Circular Kitchen.

At this moment we are running a crowdfunding campaing to be able to place 10 wormhotels at restaurants in the city of Amsterdam. By offering chefs a tool to make their restaurant kitchens sustainable we can work towards a true circular economy in our cities.

The worm hotels together will transform up to 40.000 L of organic waste in the next year and produce a fine vermicompost for foodproduction in the city.

De wondere wereld onder onze voeten.

Een gezonde bodem krioelt van het leven


Wanneer je gaat graven in de tuin kom je al gauw het nodige bodemleven tegen. Tenminste, als de bodem gezond is. In een gezonde bodem leven micro-organismen in een nauwe relatie met elkaar samen en zorgen voor structuur en het vasthouden van vocht, zuurstof en de nodige mineralen en sporen elementen voor goede planten groei. 

Planten spelen een belangrijke rol in het bodemvoedselweb (lees voor meer informatie over dit mooie en complexe systeem: Het Bodemvoedselweb dat werd vertaald door Marc Siepman) en zijn als de dirigenten van het systeem. De wormen zie ik als de herders en zij verspreiden de nuttige bacteriën en houden de bodem los. De gangen die zij maken geven ruimte aan wortelgroei en maken het mogelijk om vocht goed door te laten. 

De manier waarop door de mens met de bodem wordt omgegaan heeft deze niet veel goed gedaan. En nu worden de effecten daarvan pijnlijk duidelijk. Bodem erosie is een groot probleem en wetenschappers stellen nu dat wij mogelijk nog maar 60 oogsten !! te gaan hebben voordat de bodems op de wereld helemaal kapot gemaakt zijn.

We moeten iets doen en we kunnen niet langer wachten totdat 'iemand anders' het voor ons gaat oplossen. Er wordt eindeloos gepraat en ondertussen is al weer de volgende 'black friday' voorbij gekomen. Daar zit je dan met je mega-tv waarop nog wel beelden van weelderige natuur te zien zijn, maar buiten de deur waait t stof in het rond. Een toekomst beeld dat ook in een land als Nederland niet ondenkbaar is, als we zo doorgaan.

Dat is de ondertitel van het eerder genoemde boek Het Bodemvoedselweb. Zeker, we hebben grote oplossingen nodig. Maar als we wachten totdat 'iemand' daar mee komt is het te laat. Laten we daarom zelf met acties komen die bijdragen aan het zorgen voor de bodem. Vele kleine beetjes maken een hele grote!

Zelf ben ik om die reden begonnen met het maken van compost in mijn eigen achtertuin. Toen ik zag dat dat eigelijk heel makkelijk was, en toch niet veel mensen die stap namen, ben ik mij gaan inzetten om zo veel mogelijk mensen te inspireren om ook te gaan composteren. Door wormenhotels te bouwen en te laten zien dat ook in de stad de mooiste compost gemaakt kan worden, wordt nu al per jaar circa 60.000 L GFT-afval niet meer weggegooid maar gecomposteerd in wormenhotels door mensen in de stad. Om dat volume nog verder te laten groeien plaatsen we nu ook wormenhotels bij restaurants.

Wormenhotels voor de Circulaire Keuken.

Op dit moment loopt de crowdfunding Compost a la Carte om wormenhotels te kunnen plaatsen bij restaurants in de stad. Door wormenhotels te plaatsen bij 10 restaurants in de stad kunnen wij volgend jaar nog eens circa 60.000 L GFT-afval omtoveren tot de mooiste wormencompost. Tel daar de groepen bij die met de bouwtekening voor een DHZ Wormenhotel van Le Compostier ook gaan bouwen en dan redden de wormenhotels van Le Compostier volgend jaar al 150.000 Liter GFT-afval van de storthoop en maken wij 50.000 L rijke wormencompost voor bodemverbetering en voedselproductie in de stad.

Amsterdam is a great place to visit


Amsterdam is a beautiful city and a very popular place to visit for tourists these days. With a rich cultural history and many cultural highlights to visit, Amsterdam is now visited by 17 million tourists per year. The many tourist might be good for the economy of Amsterdam, but the environmental and social impact of tourism on the city can also have its downsides. 

While staying in Amsterdam many of the visitors will have their meals at diners and restaurants. Luckily there are many great restaurants to choose from. With a wide range of kitchens from all over the world there is a place for every taste to be found. But while enjoying a great meal the visitors of restaurants might not be aware of the amount of foodscraps and foodwaste that is produced in the restaurant industry. Mostly organic waste is not processed in a sustainable way and this causes environmental pollution.

Worm Hotels at Restaurant Kitchens


An alternative for wasting the kitchen scraps in the restaurants is to compost them in a Worm Hotel. A Worm Hotel is a furniture in which a small eco-system will make the most wonderful compost out of the organic waste. By placing them at restaurants the chefs will be able to make compost to feed the soil of their production gardens. 

More and more restaurants are investing in making their kitchens more sustainable and use produce from local farmers or even grow some food themselves in gardens on rooftops or next to the restaurant. The Vermicompost from the Worm Hotels can be used in the garden or given back to the local farmers.
